I know that they have a similar flavor, but I can't find a conversion for them. My recipe calls for one star anise, and I want to use whole anise seed. I can use weights or teaspoon/tablespoon measurements. Any suggestions? How much anise seed should I use if the recipe calls for star anise? If you ground a star anise it might make about 1/4 to 1/2 teaspoons of star anise spice. So I'd grind the same amount of anise seed that you have and use it as you want in a recipe. The tastes are really different so you might want to add another one with it to tone it down. Like mace if you have it. It's the covering on the nutmeg spice. The star anise has a more warm scent and taste....but not hot. The regular anise is strong so I would not use too much of it.
Best of luck,

8 whole seeds... each star anise has 8 seeds. How much anise seed should I use if the recipe calls for star anise?Star anis is a very strong flavor, so only use 1-3 depending on your own tasteHow much anise seed should I use if the recipe calls for star anise?
These are two different things:
Anise seeds are small seeds whereas Star Anise looks like a flower with petals.
I would recommend to use 2 or 3 petals of the Star Anise if your recipe calls for it.
With regards to anise seeds, one normally use 1 teaspoon of it.How much anise seed should I use if the recipe calls for star anise? You should steep the whole seeds in hot water - and use the water to season the recipe accordingly. Just use enough to cover the seeds and let them steep. Once you can smell the aroma coming from the liquid use it to season your dish (wait a few minutes). Some steep Star Anise in oil (don't think you have time for that).
Bon appetit!
